About Politics

Don't want to start a big argument, but just wondered what everyone is thinking about the upcoming elections.

Just watched the Democratic Convention and was not impressed by the first night. But, things picked up after that. Had some pretty good speeches I thought. Really impressed by Joe Biden. Kinda think he would have been a better presidential nominee.

Looking forward now to see what the Republicians have to say at their convention.

Homemade Mustard

I have never made this, but I'm going to try it. I suppose the reason for making your own is that homemade usually is better...plus you can adjust ingredients to suit your own taste. I would guess that it is not cheaper than store bought so that is not a reason to make your own. Here's the recipe if you want to try it.

1/2 cup dry mustard

1/2 cup flour

1 tsp salt

1 tablespoon sugar

1/2 cup white vinegar

1/2 cup water

2 eggs

1/2 tsp tumeric

1 tablespoon butter/margarine

Mix ...

I guess there are hundreds of recipes for zucchini bread, but this one I made yesterday and it really came out good.

INGREDIENTS:

3 eggs

1 cup vegetable oil

2 cups grated zucchini

2 tsp vanilla

3 cups all-purpose flour

2 tsp ground cinnamon

1 tsp baking soda

1/4 tsp baking powder

1 tsp salt

1/2 cup chopped walnuts

Great Mixer

After wanting a stand up mixer for 30 years, I was given one for my birthday today. It's a Kitchen Aid and is wonderful.

I always wanted one to make homemade bread and I got to do it today. I made two loafs of regular bread...yeast and all that stuff. Came out great and smelled so good when cooking.

So, if you are thinking of getting a mixer, I highly recommend this brand. I think they are fairly expensive (which is why I never had one) but they are suppose to last a long time.

How to make a buttermilk substitute

A lot of Southern recipes use buttermilk. I don't usually keep buttermilk on hand but here is a simple method for making a substitute.

Mix 1 tablespoon of white vinegar in 1 cup of regular milk. Allow to sit about 1 minute before use. Stir thoroughly prior to adding to your recipe.

I wouldn't recommend drinking it but it works great in cooking.
